Coconut Macaroons

 

 

1/2 c Honey

1tsp. vanilla extract

3 c. raw shredded unsweetened coconut

3 Dates: Pitted

You could also vary them by adding 3 strawberries, 1/2 tablespoon cocoa or carob powder, 1 tablespoon Almond Butter, 1/2 juiced orange.

Directions:

Blend all ingredients in a food processor until well mixed.  Make Tablespoon sized balls with a cookie scooper or roll them by hand.

Dehydrate at 105 degrees for 4-6 hours. If you want them a little crunchier, dehydrate them a little longer.
